Development of β-Glucan Enriched Arabic Bread

Enhancing nutrition in the Kuwaiti diet

Foods rich in fiber can provide several health benefits such as helping to maintain a healthy weight, and lowering the risk of diabetes and heart disease. The Food and Nutrition Program at KISR initiated a project to enrich traditional Arabic bread with β-glucan in order to enhance the population’s fiber intake. The outcome of the project will benefit the Kuwaiti population by providing β-glucan-enriched Arabic bread with optimum baking parameters, rheological properties, and consumer acceptability.
